When my friend was on a special diet that required low iodine (those of you familiar with thyroid cancer know the diet I’m referring to), I did all the cooking for him, and eventually for half a dozen people from his team, who preferred his lunches to theirs. They LOVED my tamales, and yet, it was the first time I’d ever made tamales. I learned how to make a decent hot sauce to sprinkle on top, too.
